- 6 garlic cloves, peeled
- ½ 75 g yellow onion, peeled
- 1 lime, zest, flesh only
- 4 cups chipotle peppers in adobo sauce
- 2 teaspoons cumin seeds [or ground cumin]
- 1 16 g dried ancho chili pepper
- 2 cups 300 g fresh pineapple, cut into chunks
- ¼ cup 40 g coconut sugar, optional
- 1 teaspoon kosher salt, optional

- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Run the Dips & Spreads Program or start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 60 seconds, using the tamper to push ingredients toward the blades.
- Marinate desired vegetables or protein (try chicken or turkey) with Al Pastor sauce for 30 to 45 minutes, then cook as desired. We love serving this with pickled onions, cilantro, and fresh corn tortillas.

- This is a great marinade, finishing sauce, or both when cooking a dish. Try topping your tacos with reserved sauce after marinating and cooking your desired filling! The tough-to-blend cumin seeds and dried chiles make this a winning Vitamix recipe.
