  • This dish makes a great brunch entrée or side dish. It even works as a dessert — just top with some seasonal sorbet.This is an incredibly versatile dish, allowing you to use what you have on hand to make a delicious dish. If you don't have apples, try peaches or pears. Don't have walnuts?  Try with almonds or pecans. Want to make it vegan? Swap out the eggs for flax "eggs" and the honey for maple syrup. To make flax egg mix 1/2 cup (85g) flax meal with 2/3 cup (180ml) water.  In the end you'll have a nutrient dense meal loaded with protein, healthy fats, and fiber. It's great for you and helps reduce food waste, so it's a win for the environment too!
