  • 1 cup 130 g peanuts, unsalted
  • 2 Tablespoons 30 g honey
  • ¼ teaspoon ground cayenne pepper
  • ½ teaspoon Ancho chile powder
  • ¾ teaspoon kosher salt, optional

Directions

    1. Preheat the oven to 375°F (190° C).Spread peanuts on a parchment lined baking tray (a silicone baking mat is ideal). Toast peanuts until golden about 3–5 minutes.
    2. While nuts are toasting combine honey, cayenne pepper, ancho pepper and salt in a medium sized mixing bowl.
    3. When nuts are toasted, remove from oven and pour into mixing bowl with honey mixture. Stir to combine, making sure all nuts are well coated. Pour coated nuts back onto baking sheet and return to oven. Bake 3–5 minutes allowing sugar to caramelize slightly being careful not to burn. 
    4. Remove pan from oven and allow nuts to cool slightly.Separate nuts while slightly warm, before sugars harden.
