- 1 ½ cups 45 g Italian flat leaf parsley, tightly packed
- 1 ½ cups 30 g fresh mint leaves, loosely packed
- ¾ cup 180 ml extra virgin olive oil, optional

- ½ teaspoon sea salt, optional
- ½ teaspoon ground black pepper

- ⅛ teaspoon ground black pepper
- 1 cup 100 g walnuts
- ½ cup 15 g Italian flat leaf parsley, tightly packed
- ½ cup 10 g fresh mint leaves, loosely packed
- ¼ cup 60 ml extra virgin olive oil, optional
- 1 lemon, zested, peeled
- ⅛ teaspoon sea salt, optional
- ⅛ teaspoon ground black pepper

- Use a microplane or grater to zest the lemon. With a peeler or paring knife, remove the white pith from the fruit.
- Place ingredients into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 30 seconds or until desired consistency is reached, using the tamper to press ingredients toward the blades.
