Ingredients

  • ½ cup 120 ml 0% plain Greek yogurt
  • 1 large Tablespoon egg
  • 1 teaspoon Tablespoon vanilla extract
  • ½ cup 110 g butter, softened
  • 1½ cup 180 g powdered sugar
  • ½ teaspoon 2 g almond extract
  • 1 cup 120 g whole wheat flour
  • 1½ cup 150 g all-purpose flour
  • 1 teaspoon Tablespoon baking soda
  • 1 teaspoon Tablespoon cream of tartar

Directions

    1. Heat the oven to 375°F (190°C).
    2. Place yogurt, egg, vanilla, butter, powdered sugar, and almond extract into the Vitamix container in the order listed and secure lid.
    3. Select Variable 1.
    4. Turn machine on and slowly increase to the highest speed.
    5. Blend for 30 seconds.
    6. In a large mixing bowl, combine the flours, baking soda, and cream of tartar.
    7. Stir together the liquid from the Vitamix container into the dry ingredients in the mixing bowl. Let batter sit, refrigerated, for 2 to 3 hours.
    8. On a lightly floured surface, roll dough to ⅛ inch (0.3 cm) thick and place on a baking sheet. Score into 18 pieces.
    9. Bake for 8 minutes.
    10. Remove and rescore the cookies. Cool and cut into pieces.
