- 3 cups 720 g heavy cream
- 1 teaspoon fresh rosemary
- 2 cups 200 g smoked gouda cheese, shredded
- ¼ cup 30 g onion, chopped
- 1 garlic clove
- zest of 1/2 lemon
- 2 tsp Winter Spice Seasoning
- ⅛ teaspoon ground cayenne pepper
- 3 Tablespoons 40 g butter
- 3 Tablespoons ml all-purpose flour
- 4 1.3 kg sweet potato, sliced 1/8" thick
- 1/2 cup Brown Sugar Glaze

- Preheat oven to 350°F.
- Place garlic, onion, cream, Gouda, fresh rosemary, lemon zest, seasonings, butter and flour into the Vitamix container in the order listed and secure lid.
- Select Variable 1 and press Start. Quickly increase to Variable 10 and blend for 15 seconds (Sauce will be very thick when finished.)
- Spread a ½ cup of sauce into the bottom of a baking dish and add in one layer of sweet potato slices. Spread another 1 cup of sauce on top.
- Continue layering sauce and sweet potatoes until all ingredients are used up.
- Bake at 350°F for 35 minutes then remove from oven and top with Brown Sugar Glaze.
- Bake an additional 15 – 20 minutes.
