White Chocolate Holiday Bites

Ingredients

  • ⅔ cup (100 g) white chocolate
  • 1 cup (150 g) blanched almonds
  • 1 cup (100 g) walnuts
  • 5 Tablespoons (70 g) coconut oil
  • 1¼ cups (100 g) unsweetened shredded coconut, toasted
  • ⅓ cup (40 g) raisins
  • 10 (150 g) medjool dates, pitted
  • 1 teaspoon ground cinnamon
  • 1 pinch ground cloves
  • 1 pinch kosher salt
  • for garnish, handful of white mulberries & handful of edible flowers

Directions

1. Melt the white chocolate in a bowl or bain marie.
2. While the chocolate is melting, add all remaining ingredients into the Vitamix container in the order listed and secure the lid.
3. Turn the machine to Variable 5. Pulse the machine 15-20 times, using the tamper to press ingredients toward the blades, blending until combined but leaving some texture in the mixture.
4. Using a small ice cream scoop, or your hands, shape the mixture into small bite sized balls and dip each one into the white chocolate to cover half of the ball.
5. While the chocolate is still melted, top each one with a few white mulberries and edible flowers and transfer to the fridge for the chocolate to solidify.

Pear Spinach Lime Smoothie

Our version of a fall favorite that utilizes ripe pears and spinach to please your palate.

  • 1/2 cup (120 ml) Hazelnut Milk
  • 1 large (270 g) pear, quartered, seeded
  • 2 cups (60 g) baby spinach
  • 1 slice lime, 1/8" thick, with rind
  • 1 slice lime, 1/8" thick, with rind
  • 1 cup (130 g) frozen mango chunks
  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 45 seconds to 1 minute or until desired consistency is reached.
  • Iron is better absorbed in the body when combined with vitamin C, making the pairing of spinach with lime and mango the perfect nutrient dense and tasty combination!
  • This recipe can be doubled if blending in the 64 oz. (2L) container.

 

Persimmon Ginger Jam

When persimmons are in season, they can be a sweet treat all by themselves, or blended down to make a nice jam to go along with your morning pastries or an accompaniment on any home made charcuterie board.

  1. Place a pot of boiling water on the stove. Remove the cores from the persimmons and gently score an "x" on the bottom of each persimmon.
  2. Gently place the persimmons into the boiling water for 30-45 seconds. Immediately remove from the boiling water and place into an ice water bath to "shock" the persimmons. Once chilled, you should be able to easily remove the skins. Once the skins are removed, cut in half and remove the seeds, leaving just the fruity flesh.
  3. Place the flesh of the persimmon (should be about 1 1/2 cups (300g) into a small sauce pot. Add the remaining ingredients and cook over medium heat for 10-12 minutes, stirring occasionally. Ingredients should be reduced and broken down into a similar syrup/jam style consistency.
  4. Cool mixture completely. Place half of the mixture into the Vitamix container and secure the blade base. Depending on the consistency desired, you can run the machine at different speeds - for a chunkier style jam, select Variable 5 and pulse 8-10 times. For a smoother texture, start the blender on its lowest speed, then quickly increase to its highest speed, blending for 15 seconds.
  • This jam can also be made completely raw, but texture and taste may vary. A simple way to thicken up your mixture would be to add 1 teaspoon of chia seeds to the raw jam, mix, and let stand until thickened; add more if desired to adjust to a thicker consistency.

"Fresh Greens" Goddess Dressing

A mixture of unique greens makes this Green Goddess a fresh alternative to the original. Try it on any salad or dish needing a creamy sauce, such as falafel.

Ingredients

  • 1 garlic clove, peeled
  • 1 cup (20 g) fresh basil leaf, loosely packed
  • 1 cup (20 g) baby kale
  • 1 cup (30 g) dandelion greens
  • ½ cup (10 g) fresh chives
  • 1 lemon, peeled
  • 2 teaspoons maple syrup, optional
  • 1½ cups (360 ml) almond yogurt, or nonfat Greek yogurt
  • 2 Tablespoons (30 ml) extra virgin olive oil, optional

Directions

1. With a peeler or paring knife, remove the peel and white pith from the lemon, leaving just the flesh.
2. Place all ingredients into the Vitamix container in the order listed and secure the lid.

It’s one of the most popular recent additions to the cold coffee category: a cold foam topping that adds richness, flavor, and an appealing visual quality to the delight of coffee lovers everywhere.

Adding cold foam is also a winning proposition for quick-serve establishments and convenience stores. Businesses that offer this specialty can gain access to the prized craft coffee market and the opportunity to serve cold coffee drinks and other beverages at a premium price point.

If your facility is already equipped with the dedicated space and staffing to offer crew-serve foods and beverages, then adding cold foam as a topping can be a smart move that will help you get more out of existing equipment and inventory. What’s Needed to Make Cold Foam

A successful cold foam program begins with equipment, ingredients, and processes chosen to ensure speed of service and cost-effective operations. And with a strategic plan, you can make the preparation process easy and fast, even for new employees.

You may already have much of the necessary equipment, particularly if you’re using Vitamix blenders to prepare menu options like milkshakes, frozen coffee drinks, and smoothies. Give this equipment an additional use by adding cold foam to the list. With a combination such as The Quiet One® paired with the Aerating Container, you can make cold foam in under a minute using chilled skim milk.

The Aerating Container will aerate the milk with its unique blade, which is actually a disc perforated with holes. The design quickly incorporates air into the milk, expanding the volume by up to three times. Among dairy options, chilled skim milk is the most foamable base ingredient, and will produce a dense, stable foam quickly. Alternatively, you can use chilled 2% milk with similar results.

 

While there are other ways to make cold foam, using The Quiet One® Blender and Aerating Container is a highly flexible approach that also allows you to flavor each batch to suit your customers. The size of the container, at 32 ounces, is convenient for making single or multiple servings.

 

From a staffing standpoint, the special container is very easy to use with The Quiet One® motor base, which comes with two one-touch programs dedicated to making foam, one longer than the other – although both are done in under 30 seconds. Simply add the milk and desired flavorings to the container, press the button, and the blender will do the rest.

 

While ingredients and temperature also affect the outcome, in general, the longer blending program results in a denser product with more stability, while the slightly shorter program turns out a looser, pourable foam. When it comes to flavoring cold foam, you’ll want to keep the recipes simple, beginning with ingredients you already carry in inventory. Flavored and sugar-free syrups you may already stock are a great go-to option that are easily dispensed into the blender container by the pump.

 

You can also prepare large batches of dry blends that are ready to go and easily measured out into the container by the scoop for each serving. Potential ingredients include cocoa and instant espresso, sweeteners like granulated sugar, and spices like cinnamon, all combined in the desired ratios ahead of time.

 

Around the holidays you may also consider swapping in spices or flavors as limited-time offers that will resonate with customers during the season. It may be as simple as adding a peppermint-flavored syrup or creating a powdered blend made with cinnamon and clove, for example.

 

You might also consider adding a new SKU to your inventory if it will allow you to craft a trending flavor of cold foam. Here are a few simple cold foam recipes that are easy starting points for a variety of cold beverages. They’re also built around commonly stocked ingredients and the use of The Quiet One® with the Aerating Container:

 

  • Basic Cold Foam
    Begin with a versatile recipe that works with many beverages and is easily customized: Add 3 ounces of cold skim milk (poured to the height of the blade) to the Aerating Container, fitted on The Quiet One® blender. If desired, flavor the milk with about ½ ounce of vanilla syrup or other flavored syrup before blending. This amount equates to 2 full pumps of syrup from a one-liter dispenser bottle. Pump dispense volumes may vary by bottle size, so you may need to adjust the number of pumps accordingly. Choose program 31 for a loose, pourable foam or program 32 for a denser foam.

 

  • Espresso Cold Foam
    Create a chocolate espresso foam perfect for iced coffee, nitro coffee, and cold brew: Fill the Aerating Container with 3 ounces of cold skim milk and flavor with 1/4 teaspoon of cinnamon, 1/4 teaspoon of instant espresso powder, and 1/2 teaspoon of sugar or 1 pump of simple syrup, assuming a pump dispense volume of ¼ ounce of syrup per pump and adjusting if necessary. Run on program number 32.

 

  • Matcha Cold Foam
    Make things even easier with this single-process recipe in which the drink creates its own foam layer: Combine 1 cup of chilled skim milk with 1 cup of ice, 1 teaspoon of matcha green tea and 1 pump of simple syrup in the Aerating Container, adjusting the number of pumps if necessary, based pump dispense volume and desired level of sweetness. Blend ingredients using program 31. Pour into a glass, garnish with additional tea powder, and serve.

1. Place all ingredients except for the squash, zucchini, and tomatoes into the Food Processor Work Bowl fitted with the Multi-Use Blade and secure the lid.
2. Start the machine and allow ingredients to process for about 1 minute, or until smooth. Using the Small Food Chute and the Thin Slicing Blade, press the squash and zucchini through using the Small Food Pusher until all are sliced into the bowl.
3. Remove the lid and add in the sliced cherry tomatoes. Stir the salad together and pour into your desired serving bowl, serving immediately.

Hot summer days call for a cook drink by the fire. A simple combination makes this s'mores cocktail a "simple to execute" crowd pleaser. Better yet, we use coconut milk to give us that rich decadent taste without the dairy.

  • 1 ounce vodka, marshmallow vodka preferred
  • 3 ounces Godiva chocolate liqueur
  • ½ cup (120 ml) coconut milk
  • 1 (15 g) cinnamon graham cracker
  • ½ cup (85 g) frozen banana
  • 1 cup (115 g) ice

1. Combine all of the ingredients into the Vitamix container and secure the lid.
2. Select the lowest variable setting and press start.
3. Increase to its highest variable setting and blend for 30-35 seconds.
4. Garnish with extra crumbled graham cracked if desired.

There are virtually no frozen s'mores cocktails out there. This one works great! Hot summer days call for cool summer night drinks by the fire.
