Latin Fusion and the American Taste for Something Bold

If you scan your restaurant’s menu today, would you find grilled meats dressed up with aji amarillo, or guajillo chile?
Would you find Caribbean influences, perhaps scotch bonnet peppers, curry powder, allspice, garlic, ginger, thyme and green onion?
Do you see on your menu unique salsas like Old Sour or Chintextle salsa?
If yes, that’s a good sign because the American palate is hungry for new and bold flavors, and one of the most promising sources of inspiration are the countries and regions south of the U.S. border, not only Mexico but also Central America, the Caribbean and the distinct regions of Latin America.
According to Mintel, “fusion” menu items are on a three-year growth curve; Caribbean items are trending upward; and sauces are popular, as a carrier for interesting flavors that can be added or omitted to a dish to suit the chef or customer.
Melting Pot vs. Fusion
“Fusion” is a word that sometimes gets a bad wrap. Jamaican-born chef Andre Fowles prefers the term “melting pot” to describe a historical mixture of flavors in the Caribbean that have been created over history by Indigenous people, as well as colonizers, slaves, and indentured workers from Europe, Africa, China, Southeast Asia, and India.
Andre reserves the word “fusion” to refer to something born out of curiosity – an intentional experimentation across cultural traditions.
Historically, Caribbean cuisine is a mixture of heat, acid, salt and sweetness, drawn from chiles, tropical fruits (e.g., sour oranges, lime, pineapple), white vinegar and the palpable presence of garlic and other aromatics, like cilantro and culantro, allspice, cumin, parsley, mint, ginger and shallots.
In Jamaica, scotch bonnet peppers are the preferred choice, according to Andre, but chiles are a staple ingredient throughout the Caribbean, Mexico, Central America, and South America, with a wide variety of types growing plentifully throughout the region.
Like the Caribbean, other Latin regions have their own distinctive herbs and spices, for example, hoja santa in Mexico; or Mexican cinnamon, cilantro and epazote in Central America.
However, what ties Latin America and the Caribbean together is, in large part, the plethora of delicious foods that grow well throughout this part of the world: chiles as well as rice, corn, beans, peas and tubers.
Permission to Have Fun
Fusion – the purposeful layering of cultural cuisines – expresses itself today in all kinds of colorful creations throughout the Americas, for example, Vietnamese and Honduran influences in New Orleans, Louisiana, or the popular Korean taco in Los Angeles, California.
“Now that more Caribbean chefs are getting the spotlight in restaurants and on social media, I think we’re beginning to see more fusion foods,” Andre said. “There are lots of chefs taking Caribbean flavors and adding Italian or French techniques to them. It’s amazing to see!”
Think of fusion as an invitation to make your own foray into Latin and Caribbean cuisine, to experiment with new ingredients enhancing your own repertoire of savory dishes.
“Avoid being afraid and be sure to have fun,” says Alfredo Nogueira, executive chef at Cane & Table in New Orleans. “Cooking and eating are some of the things I get great joy from in my life. They don’t have to come with a rule book.”
Many chefs and restauranteurs may still worry about not being authentic or not being of Latin descent themselves. Can you dabble and still be respectful of Latin cultures?
René González, head chef at Imperfecto in Washington D.C., says Latin ancestry is not required. “Many Latin American and Caribbean chefs appreciate the interest in their culinary traditions from chefs of diverse backgrounds,” he explained.
But, René added, it can be helpful to have someone with a Latin or Caribbean background on the chef’s team for inspiration and guidance.
“There are so many talented chefs from Latin America and the Caribbean,” Andre notes. “So why not give them room to shine in these spaces?”
Salsas and Sauces
If you’re new to Latin cooking, a great place to start is with salsa, which is a Spanish word for sauce. It’s a broad category that relies on the region’s plentiful array of chiles.
René recommends starting with a known traditional recipe. “It’s a great way to honor and respect the culinary heritage of a particular culture. It allows you to learn the foundations, then explore creative ways to add your own twist while still paying homage to the original recipe,” he explained.
Andre adds to this perspective: “If you’re aiming for authentic flavors, then some things can be replaced but not other things. For example, a jerk dish requires allspice, scotch bonnet peppers, thyme, garlic, onion, green onion and ginger. There are a lot of other possible ingredients but these are foundational.”
On the other hand, Amarys Koenig Herndon and Jordan Herndon, of Palm & Pine in New Orleans, offer another approach: Start with two different types of dried chiles. “Separately, toast them in the oven or a pan to bring out the oils. Throw them in water and let them sit. Then add salt and purée your chiles in a Vitamix blender. You can do a ton with just that,” Jordan said. “This is a great way to get to know the distinct flavors of each chile.”
“If you can just be comfortable knowing that what you are making is probably not authentic, then it’s a lot easier being an amateur exploring with these ingredients,” Jordan says.
In addition to chiles, René suggests a few other regional foods that may intrigue chefs from casual eateries: yuca (cassava), plantains, annatto (achiote), guava, sofrito and pupusas.
Chiles to Try
Each kind of chile has its own unique flavor, ranging from fruity and floral to smoky and earthy. Here are a few types to try.
René recommends:
· Serrano peppers – A bright, crisp heat, with a grassy, citrusy flavor.
· Guajillo chile – Known for its mild to moderate heat with notes of tangy berry and tea (René’s personal favorite).
Amarys and Jordan recommend:
· Dried Morita chiles – A dried and smoked jalapeños, a type of chipotle with an underlying fruity taste, not smoked as long as Chipotle Meco.
· Aji amarillo – A yellow Peruvian pepper that balances a lot of heat with “a clean vegetal flavor,” (according to Amarys), a very spicy but sweet pepper.
Andre recommends:
· Scotch bonnet peppers – Depending on the color of the peppers when you pick them (green, red, yellow, orange), they can be citrusy, and the spice level can vary (they pack heat but also bring lots of flavor). A tip: Cook the whole pepper with whatever you have in the pot so the flavor can seep out, then remove it before it bursts, avoiding some of the heat, which is mostly in the seeds.
Salsas, Spice Blends and Condiments to Try
Three offbeat favorites from Amarys and Jordan:
· Old Sour – A pepper condiment from the Bahamas, made with a fermented mixture of habaneros or scotch bonnets and lime juice (ideal for flavoring seafood).
· Huancaína sauce – Made with aji amarillo chiles and queso fresco cheese (often served over cold boiled potatoes or eggs).
· Chintextle salsa – A dried shrimp paste from Oaxaca, Mexico, made with purchased dried shrimp paste, toasted, toasted and puréed dried chiles, garlic and avocado leaves (or bay leaves). (Jordan says Chintextle salsa is a “flavor bomb” with many uses but, for starters, you can try it on tortillas or bread).
Two spice blends from Andre:
· Jerk seasoning – A seminal sauce in Jamaica, consisting of allspice, ginger, garlic, thyme, onion, green onion, scotch bonnet peppers, soy sauce, and brown sugar or molasses, plus (optional) cinnamon and nutmeg, blended in a Vitamix blender.
· Green seasoning – Similar to Haitian Sos Ti-Malice, it contains onion, green onion, thyme, lime juice or vinegar, cilantro, parsley, celery, scotch bonnet peppers, garlic, and bell peppers (used as a marinade for meats and to add extra flavor to stews, soups, and sauces).

Sometimes a high-calorie beverage is the right thing. But other times, you want something lighter -- a thirst-quenching tonic without the extra carbs and sugar.
If your summer beverage menu is missing this option, consider the new, growing category of fruit-infused drinks, sometimes called cold-craft beverages. These are low-cost, made-to-order beverages that can be dressed up with a premium presentation. Often introduced as summertime Limited-Time Offers (LTOs), they are gaining in popularity across quick-service chain menus.
Fruit-infused, cold craft beverages are best described as a high-end take on iced tea, flavored water, juice or lemonade. They feature a variety of fruit and other fresh ingredients lightly blended and served over ice, with a splash of plant-based milk, sparkling water or even a low-fat, cold foam topping.
What sets fruit-infused beverages apart from other blended beverages is their colorful, semi-translucent presentation. The drink usually begins with a water, tea, or juice base that’s delicately muddled with fruit and ice cubes (which remain whole after blending). You can accomplish this delicate blending with the help of specialized equipment, such as The Quiet One® by Vitamix® Commercial, fitted with the Vitamix Aerating Container (sold separately).
The Aerating Container is special blending container equipped with a round disc (instead of a normal blending blade), which enables the container to muddle fruit and other delicate ingredients without fully processing them. Adding ice to the Aerating Container quick-chills the ingredients and assists in the muddling process.
Also, holes in the disc-like blade force air up through milk when making cold foam toppings. Depending on the speed or blending program, the container can muddle, emulsify or foam ingredients.
Fruit-infused beverages are quick and easy to prepare. Simply load the desired ingredients in the Aerating Container and select one of four aerating programs available in The Quiet One’s bank of 34 optimized programs. With ingredients properly prepared in advance, the entire process takes just a few minutes. The cost of ingredients for fruit-infused cold, craft beverages is also relatively low.
Banana Walnut Breakfast Oats
Simple and easy to prepare, make these oats the night before to have you out the door in no time. Instead of buying almond milk and other items we make it and then add our oats and other flavoring ingredients.
Ingredients
- 3 cups (720 ml) water
- 1 cup (150 g) raw almonds
- 1 large (160 g) banana, peeled, divided use
- 1 cinnamon stick, 3" (7cm)
- 2 Tablespoons (15 g) chia seeds
- 1½ cups (130 g) rolled oats
- ½ cup (55 g) chopped walnuts
Directions
- Place the water, almonds, 1/2 of the banana and cinnamon stick into the Vitamix container and secure the lid. Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 60 seconds.
- Remove the lid and add the chia, oats, remaining banana and walnuts. Secure the lid and Select Variable 6. Pulse 4-5 times until the chia, oats and walnuts have been incorporated.
- Portion into glass jars, cover and refrigerate overnight. Top with your favorite toppings and enjoy.
Chef's Notes
Totally customizable, this recipe can be made any way you like as long as you keep the oat to almond milk ratio the same. Try blueberries, cherries, sweet roasted squash or sweet potato.
Cider Date Jam
Nothing gets more whole food or homemade than our apple cider date jam. It combines whole apples, cinnamon sticks, cloves, dates, and fresh orange for a delicious mix of fall fruits and spices.
Ingredients
- 2 cups (480 ml) water
- 6 medium (1 kg) Honeycrisp apples, halved, seeded
- 1 medium (130 g) orange, peeled
- 12 (195 g) medjool dates, pitted
- 2 cinnamon sticks, 3" (7cm) long
- 6 whole cloves [or ½ tsp. ground]
- ¼ cup (32 g) cornstarch, mixed with ⅓ cup water
Directions
- Place water, apples, orange, dates, cinnamon, and cloves into the Vitamix container and secure the lid. Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 3 minutes, using the tamper to press ingredients toward the blades as needed.
- Pour the mixture into a medium-sized sauce pot set over medium heat. Simmer for 60-75 minutes, or until mixture has reduced roughly by half (from about 8 cups of blended product to 4 cups of cooked product)
- After mixture has reduced, add the cornstarch slurry and stir to incorporate. Turn heat to high briefly, until apple mixture comes to a slight boil, to activate the cornstarch for thickening. Remove from heat and chill completely.
- After mixture is chilled, you can jar it, gift it, or enjoy it as the perfect homemade, whole-food gift.
Chef's Notes
- This recipe can be made in the 48 oz. container by simply cutting the recipe in half. More cornstarch slurry may be needed to properly thicken mixture, depending on the consistency after cooking.
- This recipe is naturally sweetened, no added sugar, but will still surely please your taste buds.
Pistachio & Orange Butter

Ingredients
- 2½ cups (300 g) pistachios
- 5 Tablespoons (70 g) coconut oil
- orange zest, from ½ orange
- 1 teaspoon vanilla bean paste, or vanilla powder
- 1-2 tbsp. maple syrup, optional
Directions
- Put pistachios on a baking tray in a pre-heated oven at 350°F (180°C) for 5-10 minutes, checking regularly to make sure that they don’t burn. Remove and leave to cool completely.
- Place pistachios into your Vitamix container and secure the lid. Start the machine on its lowest speed, then quickly increase to its highest speed. Blend for 1 minute, or until pistachios are smooth. on speed 1 for 5 minutes.
- Through the lid plug, add the coconut oil through the lid plug, or stop the machine, remove the lid and add. Blend for an additional minute. Now add the vanilla and orange zest, blending until combined. You can also add a sweetener like maple syrup now if you want, however, this is optional. Pour into a glass jar, label, and enjoy!

- 1 cup (150 g) medjool dates, pitted
- 1 cup (80 g) rolled oats
- 2 Tablespoons (30 ml) oat milk

- Place the first three ingredients into the Vitamix container in the order listed and secure the lid. Select Variable 3 and pulse, stopping to scrape down the sides of the container as necessary, until the crust ingredients are finely chopped.
- Remove the filling and evenly press into the bottom of each muffin liner to serve as a base for the cheesecakes.
- Place the remaining ingredients into the Vitamix container in the order listed and secure the lid. Start the machine on its lowest speed, then quickly increase to its highest speed. Blend for 1 minute, using the tamper to press ingredients toward the blades.

2. While the chocolate is melting, add all remaining ingredients into the Vitamix container in the order listed and secure the lid.
3. Turn the machine to Variable 5. Pulse the machine 15-20 times, using the tamper to press ingredients toward the blades, blending until combined but leaving some texture in the mixture.
4. Using a small ice cream scoop, or your hands, shape the mixture into small bite sized balls and dip each one into the white chocolate to cover half of the ball.
5. While the chocolate is still melted, top each one with a few white mulberries and edible flowers and transfer to the fridge for the chocolate to solidify.

Pumpkin Turmeric Oat Pancakes
A delicious, flour-free pancake made with whole oats that are blended with bananas and pumpkin to add a hint of sweetness. Some fresh turmeric lending a golden yellow color, and can be further adapted to make this recipe your own.
Ingredients
- 1½ cups (360 ml) Almond Milk
- ½ cup (120 g) Pumpkin Purée
- 1 medium (100 g) banana, peeled
- 2 large eggs
- 2 Tablespoons maple syrup, optional
- 2 cups (215 g) rolled oats, or gluten-free oats
- 1 Tablespoon baking powder
- 1 Tablespoon fresh turmeric, or 1 tsp. ground
- ½ teaspoon Holiday Mixed Spice Blend, or ground cinnamon
- ½ teaspoon kosher salt
Directions
1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
2. Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 60 seconds, using the tamper to press ingredients toward the blades. Let mixture stand for 15-20 minutes.
3. Scoop 1/4 cup (60ml) of pancake batter at a time onto a small, preheated and greased griddle. Cook for 2-3 minutes on each side or until golden brown and cooked through.
Chef's Notes
- Loaded with fiber, protein, and healthy fat, these pancakes will be sure to keep you full and satisfied all morning!
- Letting the mixture stand allows the oats to soak up liquid for the proper consistency.
- To make these pancakes gluten-free, simply replace the rolled oats with gluten-free oats. Flax egg may also be substituted for whole eggs - if using, increase almond milk to 2 cups (480ml) and add 2 tablespoons of brown flax seed when blending.
- This batter will continue to thicken as it sits - use immediately after blending, or thin slightly with more almond milk as needed.
"Fresh Greens" Goddess Dressing
A mixture of unique greens makes this Green Goddess a fresh alternative to the original. Try it on any salad or dish needing a creamy sauce, such as falafel.

- 1 garlic clove, peeled
- 1 cup (20 g) fresh basil leaf, loosely packed
- 1 cup (20 g) baby kale
- 1 cup (30 g) dandelion greens

It’s one of the most popular recent additions to the cold coffee category: a cold foam topping that adds richness, flavor, and an appealing visual quality to the delight of coffee lovers everywhere.
Adding cold foam is also a winning proposition for quick-serve establishments and convenience stores. Businesses that offer this specialty can gain access to the prized craft coffee market and the opportunity to serve cold coffee drinks and other beverages at a premium price point.
If your facility is already equipped with the dedicated space and staffing to offer crew-serve foods and beverages, then adding cold foam as a topping can be a smart move that will help you get more out of existing equipment and inventory. What’s Needed to Make Cold Foam
A successful cold foam program begins with equipment, ingredients, and processes chosen to ensure speed of service and cost-effective operations. And with a strategic plan, you can make the preparation process easy and fast, even for new employees.
You may already have much of the necessary equipment, particularly if you’re using Vitamix blenders to prepare menu options like milkshakes, frozen coffee drinks, and smoothies. Give this equipment an additional use by adding cold foam to the list. With a combination such as The Quiet One® paired with the Aerating Container, you can make cold foam in under a minute using chilled skim milk.
The Aerating Container will aerate the milk with its unique blade, which is actually a disc perforated with holes. The design quickly incorporates air into the milk, expanding the volume by up to three times. Among dairy options, chilled skim milk is the most foamable base ingredient, and will produce a dense, stable foam quickly. Alternatively, you can use chilled 2% milk with similar results.
While there are other ways to make cold foam, using The Quiet One® Blender and Aerating Container is a highly flexible approach that also allows you to flavor each batch to suit your customers. The size of the container, at 32 ounces, is convenient for making single or multiple servings.
From a staffing standpoint, the special container is very easy to use with The Quiet One® motor base, which comes with two one-touch programs dedicated to making foam, one longer than the other – although both are done in under 30 seconds. Simply add the milk and desired flavorings to the container, press the button, and the blender will do the rest.

Potential ingredients include cocoa and instant espresso, sweeteners like granulated sugar, and spices like cinnamon, all combined in the desired ratios ahead of time.
Around the holidays you may also consider swapping in spices or flavors as limited-time offers that will resonate with customers during the season. It may be as simple as adding a peppermint-flavored syrup or creating a powdered blend made with cinnamon and clove, for example.
You might also consider adding a new SKU to your inventory if it will allow you to craft a trending flavor of cold foam. Here are a few simple cold foam recipes that are easy starting points for a variety of cold beverages. They’re also built around commonly stocked ingredients and the use of The Quiet One® with the Aerating Container:
- Basic Cold Foam
Begin with a versatile recipe that works with many beverages and is easily customized: Add 3 ounces of cold skim milk (poured to the height of the blade) to the Aerating Container, fitted on The Quiet One® blender. If desired, flavor the milk with about ½ ounce of vanilla syrup or other flavored syrup before blending. This amount equates to 2 full pumps of syrup from a one-liter dispenser bottle. Pump dispense volumes may vary by bottle size, so you may need to adjust the number of pumps accordingly. Choose program 31 for a loose, pourable foam or program 32 for a denser foam.
- Espresso Cold Foam

Make things even easier with this single-process recipe in which the drink creates its own foam layer: Combine 1 cup of chilled skim milk with 1 cup of ice, 1 teaspoon of matcha green tea and 1 pump of simple syrup in the Aerating Container, adjusting the number of pumps if necessary, based pump dispense volume and desired level of sweetness. Blend ingredients using program 31. Pour into a glass, garnish with additional tea powder, and serve.

1. Place all ingredients except for the squash, zucchini, and tomatoes into the Food Processor Work Bowl fitted with the Multi-Use Blade and secure the lid.
2. Start the machine and allow ingredients to process for about 1 minute, or until smooth. Using the Small Food Chute and the Thin Slicing Blade, press the squash and zucchini through using the Small Food Pusher until all are sliced into the bowl.
3. Remove the lid and add in the sliced cherry tomatoes. Stir the salad together and pour into your desired serving bowl, serving immediately.

- 1 ounce vodka, marshmallow vodka preferred
- 3 ounces Godiva chocolate liqueur
- ½ cup (120 ml) coconut milk
- 1 (15 g) cinnamon graham cracker
- ½ cup (85 g) frozen banana
- 1 cup (115 g) ice
1. Combine all of the ingredients into the Vitamix container and secure the lid.
2. Select the lowest variable setting and press start.
3. Increase to its highest variable setting and blend for 30-35 seconds.
4. Garnish with extra crumbled graham cracked if desired.
