- 3 cups 420 g acorn squash, peeled, seeded and cut into 1" cubes
- 1 Tablespoon extra virgin olive oil [or optional]
- ½ small 60 g onion, peeled, chopped
- 1 garlic clove, peeled
- ½ medium 90 g apple, halved, seeded
- ¼ teaspoon dried thyme
- ⅛ teaspoon salt, optional
- 2 cups 480 ml low sodium vegetable broth

- Steam squash in a steamer or microwave until fork tender. Sauté onion and garlic in oil until onion is clear and tender.
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 3 - 5 minutes or until hot.
