Orange Chocolate Nut Cake

Ingredients

1 cup 140 g raw almonds
½ cup 80 g dates, pitted
3 Tablespoons coconut oil, softened

Place almonds, dates and coconut oil into the Vitamix container in the order listed and secure lid.
Select Variable 1.
Turn machine on and slowly increase speed to Variable 10, then to High.
Blend for 1 minute, using the tamper to press ingredients into the blades.
Scoop mixture onto an 8-inch (20-cm) spring form pan, or push pan. Press the mixture into the sides and bottom of pan.
Place in freezer to set.
Place cashews, juice, agave, cocoa powder, salt, extract and coconut oil into the Vitamix container in the order listed and secure lid.
Select Variable 1.
Turn machine on and slowly increase speed to Variable 10, then to High.
Blend for 1 minute, until the mixture has the consistency of a thick pudding.
