Ingredients

  • ½ cup 120 ml extra virgin olive oil
  • ½ cup 120 ml water
  • ½ cup 120 ml apple cider vinegar
  • 1 Tablespoon mustard seed
  • 1 Tablespoon celery seed
  • 3 30 g dates [or 1 Tablespoon honey], pitted
  • 1 1 kg red cabbage, shredded
  • 1 medium 150 g yellow onion, thinly sliced
  • 1 medium 150 g carrot, peeled and shaved
  • 1 cup 115 g sliced fresh chives
  • 1 teaspoon salt, optional
  • ½ teaspoon ground black pepper
  • ½ cup 120 ml extra virgin olive oil

  • 1 Tablespoon celery seed

Directions

    1. Place oil, vinegar, mustard seed, celery seed, and dates into the Vitamix container in the order listed and secure lid.
    2. Start the blender on its lowest speed, and slowly increase to its highest speed.  Blend for 30 seconds.
    3. Combine cabbage, onion, carrots, and fresh chives in a bowl. Pour blended vinaigrette over the salad and toss to combine.
