Ingredients

4 900 g summer squash
½ 30 g fresh parsley leaves
½ cup 110 g feta cheese, optional
½ cup 50 g walnuts
1 cup 240 ml {Lemon Garlic Dressing}

Fit the Food Processor with the Thick Slicing Disc.
Start the processor and, using the Food Pusher, feed the squash through the Small Food Chute opening. If item is too large, cut to size and feed through the Large Food Chute opening. Place squash into a large mixing bowl.
Fit the Food Processor with the Multi-Use Blade. Place the parsley, cheese, and walnuts into the Vitamix container and secure the lid. Pulse the mixture 10 times or desired consistency is reached. Add the mixture to the bowl with the squash.
Add 1 cup of the lemon garlic dressing to the salad mixture and toss to combine.
