- 2 Tablespoons 30 ml Dijon mustard
- 8 roasted garlic cloves
- 1 small 30 g shallot, peeled, roasted
- 3 medjool dates, pitted [or honey to taste]
- 1 Tablespoon {Winter Spice Seasoning}
- 1 fresh rosemary, leaves
- 2 cups 480 ml extra virgin olive oil
- ½ cup 120 ml apple cider vinegar
- 1 Tablespoon 15 ml Dijon mustard

- Place all ingredients except olive oil into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed, using the tamper to press ingredients toward the blades.
- Blend for 30 seconds.
- Reduce to Variable 6, remove lid plug and add oil through lid plug opening.
- Replace lid plug and blend an additional 10 seconds.
