Ingredients

  • ½ cup 120 ml extra virgin olive oil
  • 1 ½ cups 225 g roasted red pepper, seeded
  • 1 garlic clove
  • ¾ cup 75 g walnuts, toasted
  • ½ cup 10 g fresh basil leaves
  • ½ cup 55 g sun dried tomatoes, drained
  • ½ cup 50 g soy parmesan [or parmesan cheese]
  • ½ teaspoon sea salt
  • 1 teaspoon lemon zest
  • ¼ teaspoon ground black pepper

Directions

    1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
    2. Select Variable 6.  Pulse about 18 times, using the tamper to press the ingredients toward the blades until desired consistency is reached.
