Zero Proof Espresso Orange Tonic

Coffee drinks aren’t just for breakfast anymore! Try this zero-proof recipe as a cocktail before or after dinner—or try it as an alternative to your usual morning cuppa joe.

Ingredients

  • 1 cup (240 ml) espresso, chilled
  • 3 Tablespoons (45 ml) maple syrup
  • 3 slices orange, 1/4", halved with rind
  • ½ cup (120 ml) tonic water, split use
  • 2 cups (260 g) ice cubes, plus extra for serving

Directions

  1. Place the chilled espresso, maple syrup, orange slices and 2 cups of ice into the AER container and secure the lid. Start the machine on its lowest speed and increase to its highest speed. Blend for 25–30 seconds
  2. Fill two 16oz cocktail glasses 3/4 full with ice. Pour the mixture over ice, splitting between the two glasses. If desired, use the lid to slightly strain the mixture as your pouring. Top with 2oz of tonic water per glass.

Chef's Notes

Looking to lighten this drink up a bit more? Try reducing the maple syrup or replacing with a plant based zero calorie sweetener like stevia or monk fruit.

Mushroom and Cashew Bisque

Mushroom bisque is taken to a new level, with a flavorful mushroom mix and roasted cashews blended down into a perfect purée.

Ingredients

  • 1 Tablespoon extra virgin olive oil
  • 4 cups (400 g) crimini mushrooms, or mixed mushroooms, cleaned, cut into large chunks
  • 3 cups (720 ml) vegetable stock
  • 1/2 cup (14 g) dried mixed mushrooms
  • 1 cup (140 g) roasted cashews
  • 1 slice (5 g) yellow onion, peeled
  • 1 small garlic clove, peeled

Directions

  1. Preheat a large skillet over medium-high heat. Add olive oil and heat, then add mushrooms and sauté for 10 minutes or until mushrooms begin to caramelize.
  2. Place mushrooms and other remaining ingredients into the Vitamix container in the order listed and secure the lid.
  3. Start the blender on its lowest speed, then quickly increase to its highest speed.
  4. Blend for 5 minutes 45 seconds, or select the Hot Soup program and allow the machine to complete the programmed cycle.

  • Cashews lend not only a creamy quality to this bisque, but also provide a boost of protein and healthy fats.
  • A combination of mushrooms works best in this dish, caramelizing in a pan before being blended with other raw ingredients and cashews to make a delicious vegan bisque.

  • 1 (135 g) granny smith apple, halved
  • 2 cups (50 g) baby spinach

  • 5 cilantro stalks
  • 1 slice lime, 1¼", with rind
  • 2 cups (275 g) frozen pineapple chunks

Directions

  1. Place ingredients into the Vitamix in the order listed and secure the lid. Start the blender on its lowest speed and quickly increase to its highest speed. Blend for 60 seconds.
