  • ½ cup 120 ml water
  • ¼ lemon, peeled
  • 1 pound 454 g strawberries, stemmed
  • 6 90 g pitted dates [or 1/4 cup honey, optional]
  • 1 cup 240 ml water
  • ½ lemon, peeled
  • 2 pound 908 g strawberries, stemmed
  • 12 180 g pitted dates [or 1/2 cup honey, optional]
  • ½ cup 120 ml water
  • ¼ lemon, peeled
  • 1 pound 454 g strawberries, stemmed
  • 6 90 g pitted dates [or 1/4 cup honey, optional]

Directions

    1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
    2. Run the Dips & Spreads Program or start the blender on its lowest speed, then quickly increase to its highest speed.  Blend for 60 seconds, using the tamper to push ingredients toward the blades.

Chef's Note

  • Depending on how ripe and sweet your strawberries are, no dates or honey may need to be added in order to achieve a sweet strawberry purée.
